Time and time again, the vegan diet proves to be the healthiest for everyone. I’d like to share a healthy food tip today. Tomatoes are rich in the important nutrient lycopene ‒ this is what gives them their red color. They are also powerful sources of vitamins A and C, and fiber, all of which reduce inflammation in the body. Additionally, vitamin C assists in the formation of muscles, blood vessels, and parts of our bones, and vitamin A is essential for both eye health and growth and development. It has been shown that tomatoes and tomato-based products can help prevent cancer and heart disease. I recommend buying locally grown tomatoes since they are able to ripen naturally and aren’t exposed to ethylene gas treatments which encourage artificial ripening. A tomato is fully ripe when it has a deep red color, the result of increased lycopene content. You can easily incorporate tomatoes into your diet for their health benefits‒ use them in salsas and sauces, stews and soups, salads and sandwiches, or wherever you need a colorful lift!
