Here is a tasty recipe tip on how to make vegan crispy parmesan broccoli chips. Broccoli is an excellent vegetable for multiple reasons. It is high in both folate and immune-boosting vitamin C and it’s also a good source of dietary fiber and potassium. Preheat your oven to 215 degrees C (420°F). Bring a large pot half full of water to the boil. Chop three broccoli crowns into large florets and add these with one teaspoon (six grams) of salt to the pot. Blanch the broccoli for 1-2 minutes then strain and place it on a platter with paper towels to dry. Line a large, rimmed baking sheet with parchment paper. Sprinkle a thin layer of around 280 grams (10 ounces) of grated vegan cheese evenly over the baking sheet and add the broccoli, spacing them out so there is enough room to mash them. Use a small glass or jar to gently, but firmly compress the broccoli pieces flat. Sprinkle some salt, onion powder and your favorite dried herbs over the top. Bake for 25-30 minutes or until the cheese has changed to a golden-brown color and the broccoli is crispy. Let it cool and then break it apart to serve.
